Ingredients (for 12 muffins)
- 250 g pumpkin
- 125 g brown sugar
- 100 g sunflower seed oil
- 1 egg
- 220 g flour
- ½ packet baking powder
- 3 g speculaas spices (cinnamon, coriander, nutmeg, cloves, ginger, cardamom)
- dark chocolate chips to taste
Procedure
- Boil the pumpkin, cut into small cubes, in a pot with a little water until tender.
- In a mixing bowl, beat the sunflower seed oil with the brown sugar until well combined. Add the boiled pumpkin and the egg, and beat until the mixture is smooth.
- Sift the flour, baking powder, and spices together. Gradually add the dry ingredients to the mixture, mixing well. If the batter is too thick, add a few tablespoons of milk to adjust the consistency. Once the batter is smooth, fold in the chocolate chips.
- Pour the batter into muffin cups and bake in a preheated oven at 170°C (338°F) for 20 minutes, or until a toothpick inserted into the center comes out clean.
