SPECULAAS-SPICE PUMKIN CHOCOLATE MUFFINS 🍂

Ingredients (for 12 muffins)

  • 250 g pumpkin
  • 125 g brown sugar
  • 100 g sunflower seed oil
  • 1 egg
  • 220 g flour
  • ½ packet baking powder
  • 3 g speculaas spices (cinnamon, coriander, nutmeg, cloves, ginger, cardamom)
  • dark chocolate chips to taste

Procedure

  1. Boil the pumpkin, cut into small cubes, in a pot with a little water until tender.
  2. In a mixing bowl, beat the sunflower seed oil with the brown sugar until well combined. Add the boiled pumpkin and the egg, and beat until the mixture is smooth.
  3. Sift the flour, baking powder, and spices together. Gradually add the dry ingredients to the mixture, mixing well. If the batter is too thick, add a few tablespoons of milk to adjust the consistency. Once the batter is smooth, fold in the chocolate chips.
  4. Pour the batter into muffin cups and bake in a preheated oven at 170°C (338°F) for 20 minutes, or until a toothpick inserted into the center comes out clean.
