Ingredients
For about 12:
- 2 eggs
- 150 g flour
- 60 g sunflower oil
- 150 g sugar
- 75 ml milk (lactose-free if preferred; can also be replaced with a plant-based drink like soy or almond)
- ¼ packet of baking powder (about 4 g)
- 35 g unsweetened cocoa powder
- 50 g milk or dark chocolate (according to preference)
- A pinch of salt
For decoration (optional):
- 50 g milk or dark chocolate (melted)
- Sugar decorations
Procedure
1️⃣ In a bowl or stand mixer, beat the sugar with the eggs until light and foamy.
2️⃣ Add the sunflower oil and mix until well combined.
3️⃣ In a separate bowl, sift together the flour, baking powder, cocoa powder, and salt.
4️⃣ Gradually add the dry ingredients to the egg mixture, alternating with the milk, and mix until the batter is smooth and thick.
5️⃣ Chop the chocolate into small pieces. Stir most of it into the batter, saving a few pieces for topping.
6️⃣ Spoon the batter into muffin liners or molds. Add the remaining chocolate pieces on top.
7️⃣ Bake in a preheated oven at 180°C (static) for about 30 minutes.
8️⃣ Let the muffins cool completely.
🎉 Optional decoration: Spoon about 1 teaspoon of melted chocolate on top of each muffin and add sugar decorations as desired.
