BANANA MUFFINS WITH A KRUIDNOTEN CRUNCH

These banana muffins are filled with crunchy chocolate-covered kruidnoten, the Dutch spiced cookies that taste like little bites of December 🎄
Soft, spiced and just a little bit dangerous to keep around… 😏

Ingredients (about 12 muffins)

  • 2 bananas
  • 1 egg
  • 150 g flour
  • 70 g brown sugar
  • 40 ml sunflower oil (about 37 g)
  • 10–11 g baking powder
  • About 15 mixed chocolate-covered kruidnoten
  • Cinnamon to taste

Procedure

  1. Preheat the oven to 160°C. 
  2. In a bowl, mash the bananas with a fork until smooth.
  3. Add the brown sugar, egg, and sunflower oil and mix well.
  4. Add the flour, baking powder, and cinnamon, and stir until you get a smooth batter
  5. Chop and fold in the kruidnoten.
  6. Fill the muffin tin & bake for 20–25 minutes, until the muffins are golden brown.
