For my Nederlander’s birthday, a cake to honor his big passion for classic cars: a cream tart with fluffy, thin layers of biscuit sponge, a silky mascarpone cream, and raspberry jam. All shaped like a classic Fiat 500 🚗
FIAT 500 CAKE
Ingredients
For the biscuit (about 0.5 cm thick / 31×40 cm tray):
– 300 g egg whites + 150 g yolks (approx. 8 eggs)
– 180 g sugar + 18 g vanilla sugar
– 60 g flour + 40 g potato starch
– 100 g sunflower oil
For the mascarpone cream and jam filling:
– 125 g fresh cream
– 125 g mascarpone
– 20 g powdered sugar
– A few tbsp raspberry jam (you can also swap for blueberry or mixed berry jam)
For final decorations:
– Fresh raspberries and blueberries
Prepare the biscuit
- Whip the egg whites with sugar until glossy.
- Lightly beat the yolks and fold them in using a spatula with slow, top-to-bottom movements.
- Sift in the flour and potato starch, then fold gently into the batter.
- Add the oil and fold until smooth.
- Line the baking tray with parchment paper and spread the batter evenly using a spatula. Aim for an even thickness of about 0.5 cm.
- Bake at 190°C (static) for 12–13 minutes.
- Place a clean sheet of parchment on a cooling rack and flip the biscuit onto it. Let it cool completely before gently removing the original parchment.
- Cut out the car shapes (I managed to get 3 using this model found online).
Prepare the mascarpone cream
- Whip the cream, then add mascarpone and powdered sugar until smooth and fluffy.
- Keep half plain, and add raspberry jam to the other half.
- Transfer both creams into separate piping bags (nozzle size: 0.5–1 cm).
- Mix a few tablespoons of raspberry jam with 1 tsp of water to make it more fluid, and transfer it to a piping bag (nozzle size: 1–2 mm).
Assembly (your way!)
- Place the first biscuit layer on your serving tray.
- Pipe plain and raspberry creams around the edges.
- Fill the center with raspberry jam (optional: add a thin layer of cream on top for extra height).



4. Add the second biscuit layer and repeat the same filling pattern, or switch it up. You can also place some fresh blueberries in the outer layer for extra stability.
5. Place the final biscuit layer. Brush it lightly with leftover jam, then decorate with fresh berries and add some piping details to mimic wheels and windows for that Fiat 500 look.
