I love the little shapes you get with a cookie press. They look fancy, but it’s really just a simple, fluffy shortcrust dough!

Ingredients (make about 50 cookies)
- 270 g plain (00) flour
- 170 g butter, softened
- 90 g sugar
- 1 egg
- 1 sachet vanilla sugar / vanillin
- Neutral vegetable oil, to lightly grease the press discs
- Powder sugar for decoration (optional)
Procedure
- In a stand mixer, beat the softened butter with the sugar until creamy and fluffy.
- Add the egg and the vanilla, and keep beating until everything is smooth and fully combined.
- Turn off the mixer. Add the flour little by little, mixing well with a wooden spoon. (This takes some strength!) You want a soft, smooth, homogeneous dough.
- Load the dough into a cookie press. Lightly grease the disc you chose with a bit of neutral vegetable oil, so the dough slides easily and doesn’t stick.
- Press the cookies directly onto an ungreased non-stick baking tray (or a plain metal tray). Hold the cookie press flat against the tray so the shape sticks properly.
- Bake in a preheated oven at 180°C for about 12 minutes, until just lightly golden.
- Let the cookies cool on the tray. Then, decorate as you like with powder sugar. I also used some silver sugar pearl because that’s what I had at home.
