CHOCOLATE CUPS WITH PASTRY CREAM & STRAWBERRIES

These chocolate cups filled with pastry cream and fresh strawberries are the perfect sweet treat for the season: fresh, light, and so pretty on the table.

Ingredients (for 4 cups)

For the cups:

  • 300 g dark chocolate
  • 300 g strawberries
  • powdered sugar, as needed
  • 4 paper cups

For the pastry cream:

  • 250 ml fresh milk
  • 3 egg yolks
  • 75 g sugar
  • 20 g flour
  • 1 sachet vanilla powder

Procedure

  1. Start with the cream. Heat the milk in a saucepan over low heat until just about to boil, then turn off the heat.
  2. Whisk the egg yolks with the sugar until light and fluffy. Add the flour and vanilla powder.
  3. Pour the egg mixture into the milk, return to low heat, and whisk continuously until the cream thickens.
  4. Transfer the pastry cream to a glass bowl, cover with plastic wrap touching the surface, let it cool, then chill in the fridge.
  5. For the chocolate cups, start with melting the dark chocolate in a double boiler.
  6. Pour the melted chocolate into the paper cups and rotate them to coat the inside evenly.
  7. Turn the cups upside down on baking paper and let the excess chocolate drip off. Leave to set completely.
  8. Gently remove the paper cups and fill the chocolate shells with 1 spoon of pastry cream alternating with chopped strawberries.
  9. Decorate with whole strawberries and a dusting of powdered sugar.
