MINI-DONUTS WITH STRAWBERRY GLAZE

Today, I had the (virtual..yeah, we can’t meet in person yet…) babyshower of one of my dearest friends who’s expecting a baby girl very soon 💞 The plan was to get some nice, pink donuts at the bakery and have a sweet bite altogether during the event. So I thought: why not baking my own? 😉

These MINI-DONUTS WITH STRAWBERRY GLAZE are simply delicious 😋 I used the recipe of the MARGHERITA CAKE and baked them in the oven. They turn out so soft that they melt in your mouth 🍓

MINI-DONUTS WITH STRAWBERRY GLAZE

Ingredients

For the donuts (about 16 donuts)

150 gr baking flour (00)
120 gr potato starch
16 gr baking powder
3 eggs
150 gr (brown) sugar
5 gr vanilla sugar (or equivalent of vanillina or vanilla extract)
100 gr margarine or butter (left out of the fridge to soften)
75 gr almond milk

For the glaze

10 strawberries
20 gr melted butter
150 gr powdered sugar
1-2 tbsp water or almond mil
pearl sugar


Prepare the donuts

Prepare the donuts like I did here.
Pour the batter on a donut-shape tin. Bake in preheated oven 180°C for 11/12 minutes. If the cake gets dark quickly on top, cover it with aluminum foil until the baking time is over.


Prepare the glaze

Blend the strawberries until juicy. In a bowl, whisk together the powdered sugar with the melted butter and strawberry juice. If too dense, add a few tbs of milk or water. The glaze should be until silky and smooth. Dip donuts in the strawberry glaze and let rest to harden slightly.


Decorate the donuts

Dip donuts in the strawberry glaze and let rest to harden slightly. Decorate the donuts with some pearl sugar or fresh strawberries on top.
