Even in summertime, a fresh soup is a good meal for more chilly, rainy days! In particular, this COURGETTE SOUP is perfect with its light and delicate flavor 

When I make my soups, I simply cook whatever veggie with a bit of water and then just blend it until creamy. What a better way to enjoy it in its simple, authentic flavor?
For this soup (6 servings), I used 400 gr courgettes, 100 gr potatoes and 1 onion. A few sunflower seeds make a nice, final touch
