RISOTTO WITH RED GURNARD ๐ŸŸ
Red gurnard is one of the most common โ€œpoorโ€ fishes used to make fish soup. Not very famous for having a very tasty flavor. Yet, have you ever tried to make a risotto with it? The result is pretty nice ๐Ÿ˜‹
In a pan, add 6 tbs of olive oil, 1 chopped onion and cook until golden colored.
Then, add 200gr of red gurnard fish (cleaned and washed well) and cook for 5-7 minutes.
Next, add 150gr rice for risotto (I used the Vialone Nano type) and toast it for a few minutes.
Now, itโ€™s time to cook the risotto with the vegetable stock (made of 1 water + 1 cube of vegetable bouillon). Add 1 cup of stock at time and stir gently while the risotto absorbs the stock. Keep adding the vegetable stock and stirring, while cooking the risotto (about 15-20 minutes). When ready, add parsley to taste.

I had mine with a filling of low fat, lactose free quark to get some extra protein, a few strawberries and dark chocolate chocolate chips ๐Ÿ’ช๐Ÿ“๐Ÿซ And of course, I couldnโ€™t miss a nice cup of Italian coffee โ˜•๏ธ

Recipe for about 10 mini bagels:
Mix 50 gr almond flour, 20gr coconut flour, 10gr vegan protein vanilla, 7gr baking powder. Then, add 2 eggs, 120gr lowfat, lactose free quark, and 120gr no sugar almond milk.
Pour the bagel mix in the bagel baking tin and bake for about 15/17 minutes in pre-heated oven (190ยฐC).
Enjoy these yummy grain-free bagels with your fav toppings!
Macro (per mini bagel, excl. topping): 62 cal, 4 fat, 1 carb, 5 protein

Small sweet treat after lunch to enjoy with your coffee? Try these super-easy-to-bake COCONUT SOFT COOKIES ๐Ÿฅฅ
Recipe (for about 25 cookies): Mix 2 egg whites with 120 gr coconut flour and 80 gr sugar. When all ingredients are well incorporated, make some small balls with the dough and put the cookies on a baking tray, covered by baking paper. Bake the cookies for about 10 minutes in pre-heated oven (200ยฐ).

Even in summertime, a fresh soup is a good meal for more chilly, rainy days! In particular, this COURGETTE SOUP is perfect with its light and delicate flavor ๐ŸŒฟ
When I make my soups, I simply cook whatever veggie with a bit of water and then just blend it until creamy. What a better way to enjoy it in its simple, authentic flavor?
For this soup (6 servings), I used 400 gr courgettes, 100 gr potatoes and 1 onion. A few sunflower seeds make a nice, final touch ๐Ÿ˜‹
