QUARK BOWL #3 WITH HOMEMADE PROTEIN GRANOLA

For the #homemade granola (10 servings of 30gr): Combine and mix 100 gr old-fashioned rolled oats, 10 gr vegan lactose free vanilla protein powder, 150gr seed&fruit mix (sunflower seeds, pumpkin seeds, dried apricots), 20gr #bio agave syrup, 60ml water. Spread the mix in a oven tray covered with greaseproof paper. Cook (with ventilation) in preheated oven 160Β°C for about 10 minutes until golden brown. Let cool down before storing the granola on an hermetic container.

One of my latest additions to my breakfast favorites list: the APPLE PIE BREAKFAST BAKE from the My Peak Challenge meal plan 🍏🍎
It took me a few trial&error before reaching the right balance of ingredients I like. And I’d say I finally found my way!

InstaRecipe for 16 servings

Combine 120 gr old-fashioned rolled oats, 70 gr vegan lactose free vanilla protein powder, 7gr baking powder, 1 tsp cinnamon. Then, add 120 gr apple mousse, 1 diced apple, 2 medium beaten eggs, 150 gr ofΒ #nosugarΒ almond milk, 35gr 70% chocolate chips and mix well. Spread the batter on a 20x20cm baking pan (remember to spray with non-stick cooking product or cover with greaseproof paper). Cook in preheated oven 180Β°C for 25 minutes until golden brown. Let cool down and then cut into pieces. Any extras can be put in the freezer to preserve freshness and easily have a bite on another day!

InstaRecipe for about 10 mini pancakes

Mix 35gr coconut flour, 20gr vegan protein vanilla, 1tsb baking powder, a pinch of salt. Add 1 egg and 170ml no sugar almond milk. Stir and cook in the pan 2 minutes per side!

Usually I don’t buy cake mixes because I prefer to have control over the ingredients I choose for my baking. But we are in exceptional times in which finding even basic goods (e.g., all purpose flour & baking powder) at the grocery store can be the realΒ #challenge
When I ordered my grocery online and I saw this mix for a quark cake with β€œ75% less fat” and needing only 3 additional ingredients, I decided to give it a try. Plus, my fridge never lacks of quark and I had some lemon to use so I came up with a nice fruity variationΒ πŸ‹πŸ‹πŸ‹

InstaRecipe

Ingredients for a cake (about 17/18 servings): 1 pack of mix for quark cake (I used Koopmans’), 200 grΒ low-fatΒ lactose free quark, 3 eggs, 1 lemon zest.

Procedure: Mix all ingredients and cook the cake (200Β°) for 45/60 minutes (depending on the oven).
